How To Make Strawberry Tiramisu
Strawberry Puree
Start by making the strawberry puree. Place the strawberries, sugar, and water in a blender and blend until smooth. Taste and add more sugar if needed, then set the puree aside.
Make The Mascarpone Layer
Pour the cream into a bowl and whip until soft peaks form. Once it looks light and fluffy, place it in the fridge while you prepare the rest.
In another bowl, whisk together the mascarpone, icing sugar, cream, and vanilla essence. Beat until thick and creamy. Gently fold in the whipped cream with slow strokes to keep the mixture light and airy.

Assemble
Set out eight serving glasses or bowls for assembling the dessert.
Quickly dip each ladyfinger into the strawberry puree. Don’t let them soak, or they will get too soft. Place the dipped cookies at the bottom of each glass, breaking them if needed to fit.
Spoon some strawberry puree over the cookies, then add a generous layer of mascarpone cream. Repeat with another layer of dipped ladyfingers, more puree, and finish with a final layer of cream.
Cover the desserts and chill for at least four hours so the layers can set. Before serving, top with fresh strawberries and, if you like, extra ladyfingers or a sprinkle of chocolate or cocoa. Serve cold and enjoy every creamy, fruity bite.
