Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 1 clove garlic crushed
  • 2 pounds baking potatoes peeled and diced
  • 4 cups chicken or vegetable stock
  • ½ cup heavy cream
  • salt to taste
  • pepper to taste
Optional
  • cooked bacon pieces, croutons, grated cheese, and scallions for garnish
  • 1/4 cup flour

Method
 

  1. our olive oil into a soup pot and heat. Add the onion and cook until soft and fragrant, about 5 minutes. Add the garlic and cook for 1 minute.
  2. (Optional) Add flour, stirring, and cook for 1 minute.
  3. Gradually pour in stock, stirring to combine.
  4. Add potatoes, bring to a gentle boil, then simmer 15–20 minutes, until fork-tender.
  5. Remove from heat and stir in cream.
  6. Season to taste with salt and pepper.
  7. Blend in batches until silky smooth.
  8. Return to the pot and reheat gently to a simmer
  9. Top bowls of soup with bacon, croutons, grated cheese, and scallions to serve.
