Ingredients

  • 1 - 1 oz envelope dry onion soup mix
  • ΒΌ cup olive oil
  • 2 pounds potatoes cut into eighths about 6-8 medium-sized Yukon Gold or Russet potatoes

Equipment

  • Measuring cup
  • Cutting board
  • Knife
  • 9x13 inch baking dish

Method

  1. Preheat the oven to 425 degrees.
  2. Mix the olive oil and dry onion soup mix in a 9x13 baking pan. Add the potatoes and turn and mix them in the olive oil mixture until they are completely coated.
  3. Bake the potatoes uncovered for about 60 minutes or until they are golden brown and tender. Toss them halfway through roasting to get that deep, even golden color.

Notes

  • Cut the potatoes into evenly sized pieces so they cook at the same rate.
  • Spread the potatoes out on the pan to prevent steaming and encourage browning.
  • Choose a potato variety like Yukon Gold or russet for the best texture.
